Relish the Green Tuna

I went to the Encinitas street far the other day and it was soooo much fun. Why? Because I discover jalepeno relish. For those of you who have never had such a delicious creation I weep for you. For those of you who have, you will appreciate me new recipe for tuna.

I call it Green Tuna Deliciousness

1 Can of Tuna (Dolphin free)
2 tablespoons of jalepeno relish
1 tablespoon of yellow mustard
2 hard boil eggs (whites only)
salt and pepper to taste.

You may have notice that there is no mayo - that right - this is where the secret ingredient come in.

1 Very ripe avocado - the sort that you're like "oh darn this is too ripe"

the ripe avocado acts as a creamy and delicious alternative to mayo. 

This is meant to be eaten as a melt - don't short cut this people. Toast the bread and melt the cheese on the bread -  I use my panini press as a sort of toaster broiler - but apply the cold green to tuna.
